‘A citrus fruit was missing, grapefruit, to conclude my citrus olfactory journey in Italy. Originally from Asia, where it is venerated and represents an offering to the Gods, it appears in Seville, Spain, around the twelfth-thirteenth century like most citrus notes, during the domination of the Arabs, excellent travelers. Probably the largest among citrus notes, I love grapefruit for its bitterness; Bitterness is part of intelligent smells for me, unlike sweet that I find easy and uninteresting. This is perhaps because of Italian origins since bitterness in Italy is celebrated in many drinks. In this fragrance I worked not only on the lively and acidic freshness, typical of grapefruit, but I accentuated the bitter scent to distinguish it, make it unique.’ Jean-Claude Ellena’
